Jalapeño Meatloaf

Jalapeño Meatloaf

1 cup FRENCH'S® Tomato Ketchup
2 tsp. ground cumin
1 tsp. garlic powder
2 eggs
1 can 14.5 oz. fire roasted tomatoes, diced , with garlic
2 tsp. FRENCH'S® Classic Worcestershire Sauce
2 tsp. salt
3 lbs. ground beef
1 cup FRENCH'S™ Crispy Jalapeños
1/2 cup FRENCH'S® Crispy Fried Onions
1 cup shredded Mexican cheese blend


PREHEAT oven to 350°F. Mix the ketchup, cumin and garlic together and set aside.
COMBINE eggs, tomatoes, Worcestershire Sauce, and salt in a large mixing bowl. Gently mix the ground beef and Crispy Jalapenos and Crispy Onions into the egg mixture. Form into a log and place in a 9 X 13 baking dish. Bake in preheated oven for 40 minutes.
REMOVE the loaf from the oven, and drain any liquid from the pan. Spread the ketchup mixture over the meatloaf, and sprinkle with shredded cheese. Return the loaf to the oven and bake until the meatloaf reaches 160°F, about 10 minutes.
